I make a lot of baby and children's clothes, and I generally clip the piping for a collar to within 1/4 inch of the stitching before applying the piping to these tight curves so that the piping will lay flat. If necessary, I then clip it a little further after stitching the final seam. Do you have any trouble with this in your neckline curves? Since this is just between us two girls, I'll tell you that Ginsburg Trim carries stretch piping that works perfectly to add a nice edge to knits and provide a built-in scant 5/16" facing that can be topstitched for an easy turn and sew finish on tops and bodices.
